A wonderful Italian Rice recipe with authentic Italian ingredients from Alessi Foods

Hi everyone, today we are going to be diving in to how to make an authentic Italian based rice with fresh high quality Italian products from Alessi Foods, including a lovely Alessi Alla Norma sauce with Eggplant. 
Alessi has been family owned for 72 years which is mighty impressive and their products give you that genuine, authentic taste that you've been craving. I have found myself really loving their products and the taste they deliver.

I started off by using fresh egg plant, zucchini and sweet colored peppers, you can chop these in a fairly large size as we will be roasting them with a little bit of Alessi Sea Salt and Alessi Black Pepper.

Then the next step is to drizzle them with Alessi Virgin Olive Oil and roast them up nicely in the oven on the broil function. Watch them carefully to ensure they don't burn, I recommend about 5-10 minutes but every oven is different so keep an eye on the veggies. We want them well cooked but crispy with some nice toasting.

 While they are broiling in the oven we can start on our rice. First, saute 1 clove of garlic, medium chopped onion in Alessi Extra Virgin Olive Oil. As the garlic starts to brown we can add our Alessi PIne Nuts for a nice toasting. When you have sufficient browning on the nuts you can add in your one cup of rice. I like to fry the rice with no water for a few minutes just to get that roasted flavor on them, but it is not absolutely necessary. I then season with fresh Thyme from my garden and Oregano.

After that next step is to add one container of Alessi Alla Norma Sauce and two cups of water, raising the water to a boil and then lowering the heat and continue cooking for 20 to 25 minutes. The rice will be a little more moist than you are used to when it is done and that is fine, I recommend doing a taste test to check the rice for completion when you see most of the water is gone. 

This is probably when your Veggies will be sufficiently cooked so I recommend taking them out of the oven and getting started on my own personal addition, bacon. I like to pre-chop it small and cook it till it's a nice color and texture. Then I let it sit on a plate with paper towels to drain some of the grease. 

Once your rice is finished you can add the roasted veggies, the bacon and mix it up and it is ready to serve. You will really taste the flavors coming out from the Alessi Alla Norma Sauce and that is what makes this entire dish come together. As a final touch I like to garnish with fresh parsley from the garden.

As a fun little extra I also made a dessert with this dish, some home made ricotta canolis made with Alessi's  hand rolled Sicilian style Canoli rolls dipped in chocolate and sprinkled with sugar. For the filling I did a basic Canoli recipe with confectioner sugar, a touch of cinnamon and whole milk ricotta cheese whipped together in the food processor.
